SZEKELY GOULASH Southern Hungarian goulash This goulash is a specialty of Szekely, the southern part of Hungary. My grandmother cooked it without a recipe; this recipe is from my mother, with my modifications. (Szekely is not pronounced the way it's spelled; "say-ki-ee" is a little closer, but still wrong.) Ingredients (Serves 6)

Add onions back to pot and salt, paprika and the caraway seeds. 1 tsp tomato paste; pot (heavy-bottomed) rubber spatula; Sear the pork in batches in a heavy-bottomed pot over high heat. Remove from the pot then add the onion and garlic and fry until transparent. Heat lard in pot and saute onions till soft. Set onions aside and brown the pork in same pan. Deglaze pan with some water (or white wine if you want to get fancy) and scrape up the juices.

SZEKELY GOULASH : 1 1/2 lb. pork butt, no bones 3 lg. onions, cut up 3 tbsp. shortening 1/2 tbsp. salt 1 c. water 2 tsp.
